Chocolate Chip Pumpkin Bread

Ingredients

  • 2/3 cup (133g) white sugar
  • 1 cup (245g) canned pumpkin puree
  • 1/4 cup (56g) canola oil
  • 3 tbsp water
  • 1 large (50g) egg
  • 1 1/4 cups (156g) all-purpose flour
  • 2 tsp pumpkin pie spice
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup (113g) semisweet chocolate chips

NOTE: If you don’t have pumpkin spice, add 1 tsp ground cinnamon and 1/2 tsp ground nutmeg to the bread batter instead.

Directions

Preheat the oven to 350°F (175°C). Grease one 8-inch-by-4-inch loaf pan and set aside.

In a large mixing bowl, combine the sugar, pumpkin puree, cooking oil, water, and egg. Stir with a spatula until well blended. Add the flour, pumpkin pie spice, baking soda, and salt, then stir just until the flour is incorporated. Fold in the chocolate chips.

Transfer the batter to the prepared loaf pan. Bake for about 50-60 minutes, or until a knife inserted into the center comes out clean. Allow the bread to cool before slicing and serving.
